About the Recipe

These savoury muffins are perfect for little hands to mix, scoop and taste! At Sankofa Nursery, we love simple recipes that encourage children to explore new textures and flavours. This one helps them learn about vegetables while building early cooking confidence.

Ingredients

  • 1 cup self-raising flour

  • 1 egg

  • ½ cup milk

  • ¼ cup grated cheese

  • ½ cup finely grated carrot

  • ½ cup finely chopped spinach or courgette

  • 1 tbsp olive oil

  • Pinch of salt and pepper (optional)

Preparation

  1. Preheat the oven to 180°C (fan). Line a muffin tray with paper cases.


  2. In a bowl, whisk together the egg, milk, and oil.


  3. Add the flour and mix gently — it’s okay if it’s a little lumpy!


  4. Stir in the grated carrot, spinach, and cheese.


  5. Spoon the mixture evenly into the muffin cases (a great job for little helpers).


  6. Bake for 18–20 minutes until golden and firm to touch.


  7. Cool before serving. These freeze beautifully for later too.
